For the last couple of weeks, I’ve tried adding more raw food into my diet on a daily basis. Eating raw food can improve your health dramatically, so I make it a point to create delicious little recipes for my personal taste buds. And I don’t know about you, but my buds love avocados mostly because that weird, green fruit can magically turn into guacamole, which is practically food from heaven.
I intended this simple little creation to act as more of a sandwich spread than a chip dip, although you can use it for either. I keep everything pretty chunky, because my favorite way to eat this is on toasted ciabatta bread. However, you can use it in anyway you choose, unless you try it with peanut butter & jelly, because that’s just crazy talk.
Avocado Cucumber Guactasticness
- 2 Organic Avocados
- 2 Organic Tomatoes
- 1 Organic Cucumber
- Juice of Half an Organic Lemon
- Add Organic Onion Powder, Garlic Powder, Salt, & Pepper to Taste
Choppity chop the avocados, tomatoes, & cucumber. I like to mash the avocados a little first, then add the tomatoes, cucumber, & lemon juice. Then just add salt & pepper to taste, or any other seasonings you’d like. (*Sidenote: you can add onion & garlic powder, but sometimes I like to leave those out to keep my breath so fresh & so clean).
*This makes about 2-3 servings.

I’m glad I got a sample of that guacamole dip. It was really good.
